Go-To Green Beans

Serves: 6 people  |  5 Minute Prep Time |  10 Minutes to Cook

This is one of my simplest recipes but also one of my go-tos. Because whether I’m cooking for two or a crowd, it’s always a favorite. Blanching the green beans is key – it cooks them enough to be tender but keeps them bright and beautiful. You can blanch ahead – perfect for ingredient prep to use later in the week or if you want to get an early start on dinner. it’s also perfect if serving green beans on a crudite platter. When you’re ready to serve, simply sauté the shallots and toss in the green beans. Salt and pepper to taste. It’s that easy and that delicious!

Instructions:

  1. Blanch the green beans by bringing a large pot of water to a vigorous boil. Add a generous amount of salt then add the green beans.
  2. Cook for 6-7 minutes, until the green beans are firm tender but still bright.
  3. While the green beans are cooking, prepare a large bowl of ice water. Drop the green beans into the ice bath. This stops the cooking process. Drain and spread out to dry on a kitchen towel.
  4. When ready to eat, sauté shallots in the olive oil, salting the shallots.
  5. Add the green beans and sauté until heated through. Add more salt and pepper to taste.
  6. Serve immediately and enjoy!

  • 1 pound organic french green beans, ends snipped
  • 2 teaspoons olive oil
  • 1 medium shallot, thinly sliced
  • salt and pepper
