Go-To Green Beans
Serves: 6 people | 5 Minute Prep Time | 10 Minutes to Cook
This is one of my simplest recipes but also one of my go-tos. Because whether I’m cooking for two or a crowd, it’s always a favorite. Blanching the green beans is key – it cooks them enough to be tender but keeps them bright and beautiful. You can blanch ahead – perfect for ingredient prep to use later in the week or if you want to get an early start on dinner. it’s also perfect if serving green beans on a crudite platter. When you’re ready to serve, simply sauté the shallots and toss in the green beans. Salt and pepper to taste. It’s that easy and that delicious!
Instructions:
- Blanch the green beans by bringing a large pot of water to a vigorous boil. Add a generous amount of salt then add the green beans.
- Cook for 6-7 minutes, until the green beans are firm tender but still bright.
- While the green beans are cooking, prepare a large bowl of ice water. Drop the green beans into the ice bath. This stops the cooking process. Drain and spread out to dry on a kitchen towel.
- When ready to eat, sauté shallots in the olive oil, salting the shallots.
- Add the green beans and sauté until heated through. Add more salt and pepper to taste.
- Serve immediately and enjoy!
