Easy, Peasy, Cheesy Asparagus

You’ve heard it before – asparagus is our favorite spring vegetable, because who doesn’t like easy and delicious? But it’s also really good for you and  packed with fiber, folate, antioxidants, and prebiotics to support gut health (prebiotics feed probiotics – the good gut bacteria).

Like our easy, peasy asparagus recipe, this version also comes together in minutes. Roast it in the oven with olive oil, salt and pepper, then finish with lemon, lemon zest, and for a savory, cheesy flavor and added nutrients – a sprinkle of nutritional yeast.

Nutritional yeast, which you can find in health food stores, adds protein, fiber, and B vitamins (including B12 in fortified versions). It’s a great, easy add that we love to use on roasted vegetables. It’s also delicious on salads, pastas and air-popped popcorn.

Instructions:

  1. Preheat oven to 400°F.
  2. Trim asparagus (snap ends or cut evenly).
  3. Toss with olive oil, salt, and pepper.
  4. Roast about 7-8 minutes until tender-crisp and still bright green.
  5. Toss with nutritional yeast, lemon zest, and lemon juice.
  6. Enjoy!

Ingredients

  • 1 bag organic asparagus, ends chopped off
  • 1-2 Tbsp extra virgin olive oil or avocado oil
  • salt and pepper
  • zest of one lemon
  • squeeze of lemon juice
  • 2-3 Tbsp nutritional yeast
