Crunchy Cabbage Slaw

Serves: 2-3  | 10 Minute Prep Time | 5 Minutes to Cook

This no-fuss slaw is our go-to for summer meals. It’s light, crisp, and so easy to throw together — just six ingredients: purple cabbage, cilantro, toasted pepitas, olive oil, lime juice, and salt.

The result? A vibrant, refreshing dish that works almost anywhere:

Packed with fiber, healthy fats, and bold flavor, this slaw proves that nourishing meals can be simple and satisfying — even when it’s too hot to cook.

 

Instructions:

  1. Chop half of a small head of red cabbage into thin slivers
  2. Finely chop cilantro
  3. Preheat oven to 350°F and line a baking sheet with parchment paper
  4. Spread raw pepitas in a single layer on baking sheet and roast for 10 minutes. Add salt to taste.
  5. In a medium sized bowl, mix together red cabbage, cilantro, and toasted peptias
  6. Drizzle with quality extra virgin olive oil and a squeeze of lime
  7. Salt to taste
  8. Mix together
  9. Enjoy!

  • 2 tbsp quality extra virgin olive oil
  • juice of 1 lime
  • salt to taste
