Crunchy Cabbage Slaw

This no-fuss slaw is our go-to for summer meals. It’s light, crisp, and so easy to throw together — just six ingredients: purple cabbage, cilantro, toasted pepitas, olive oil, lime juice, and salt.

Instructions:
- Chop half of a small head of red cabbage into thin slivers
- Finely chop cilantro
- Preheat oven to 350°F and line a baking sheet with parchment paper
- Spread raw pepitas in a single layer on baking sheet and roast for 10 minutes. Add salt to taste.
- In a medium sized bowl, mix together red cabbage, cilantro, and toasted peptias
- Drizzle with quality extra virgin olive oil and a squeeze of lime
- Salt to taste
- Mix together
